Spinach and Artichoke Pizza

My Spinach and Artichoke Pizza was something that just came to me in a creative thought.

I had my Homemade Spinach and Artichoke Dip left over and had eaten my fill of it with Pita Chips.Looking for something new to make one day for lunch I thought hey I can make a batch of my Homemade Pizza Crust and use my Spinach Dip for what I was hoping would be a great new recipe round two
 (as Sandra Lee would say) 

I got my homemade dough made and topped it with my dip and added a little fontina cheese baked it in a screaming hot 550F oven and history was made.

UM Good is what I ended up with!
I did make my crust out a little thicker with this pizza just because hey it was my lunch and I could make it how I wanted it..Now if it would have been peperoni I would have went for thin.I couldn't really say how much of the Dip I used on my smaller size pizza (yup that's small for me) I just made sure I had enough so using the thicker crust it wouldn't be dry.I didn't go crazy with the cheese in this,however using Fontina I didn't need to.It has a beautiful flavor all on its own and melts very well.A fresh Mozzarella would have worked just as well with this,but use what you have.

As I was photographing my Pizza (and yes it had already gotten cold) I decided I wanted some red..LOL yes it was pretty as it was but I wanted it to pop..Now remember I would be eating this as well for my lunch,so I had to add something that would taste good..

Looking in the fridge there were my Sundried tomatoes..AH HA! Perfect combo with my pizza.I love those things,so with a couple chops of the knife I added them to the top,took a bite and YES! Another history in the making ...MY Spinach and Artichoke Pizza with Sun Dried Tomato
