Skillet Squash With Meat Sauce

A great one skillet meal



My first order of business with this post is to tell you that you can make this same dish using zucchini or eggplant.You can also use the ground meat of your choice.I used beef, but I also like a mixture of 1/2 beef and half pork.I have also used my share of venison and turkey would work great as well.

The second is that you dont have to use store bought sauce but I did in this picture.Use your own homemade marinara if you like.

The third thing and most important is DON'T overcook the squash in this recipe.You are not looking for mushy squash but rather a little bite left to it.

If you like spaghetti with meat sauce you will love this because it is basically the same thing, I just dont use pasta.
I know you have probably seen tons of similar recipes like this where the squash or zucchini looks like noodles.
Well ole Jodie doesn't have one of those thing a-ma jigs.
I have been making this a while and never used one of those before and figured why start now.

Kitchen note: Because the squash you use may be larger or smaller that what I used you may need to add more sauce.You want to make sure you have enough sauce so that when you add the squash it is enough for it to simmer in.

Jodies Kitchen Skillet Squash With Meat Sauce

1/2 pound ground beef or meat of your choice, browned and drained of fat
1 & 1/2 cups marinara or store bought spaghetti sauce
4 small to medium sized yellow squash cut into about 1 inch pieces
1 teaspoon garlic powder
1 teaspoon onion powder
salt & black pepper to taste
Parmesan or any Italian cheese to garnish
Brown meat in skillet, remove and drain fat.Turn skillet to medium high heat.In same skillet (no need to wash) add the marinara sauce, squash, garlic powder, onion powder, salt & pepper.Mix well.Turn heat down to simmer and let cook about 5 minutes until squash is slightly tender but still has a bite to it.Add meat back to skillet and mix all ingredients well.Sprinkle with cheese and and serve while hot.This is ever better as left overs the next day.
