Strawberry Lemonade Cake

How many of us just love a tall cold glass of Strawberry Lemonade? Well how about a Strawberry Lemonade Cake!

Since I visit the strawberry farm regularly this time of year,and I had right many to use up I thought I would do this post because it is another family favorite.
I cant tell you how excited my little fellow was the other day when he came home from school,opened the refrigerated and seen this on the top shelf.He pretty much knew right away it was my Strawberry Lemonade Cake and could hardly wait to get a slice.
The recipe came about after I had started making Moms lemonade cake.One day I was looking at all the strawberries I had and trying to think of something new and yummy to come up with,her cake plus strawberries..YUMMY!!!
When first looking at the recipe you may think it is a lot of steps but it really is very easy to put together once all the prep is done. 
This does have a total of 9 tablespoons of powdered sugar added which sounds like a lot,but the cake and glaze by itself is very tart,so you need this sweetness.Don't be intimidated by the huge amount of frosting this makes.It does take it all and if you will notice in the picture, the top layer of frosting is as thick as one cake layer.
This cake truly does taste like strawberry lemonade.

UPDATE!I made my cake again today for the first time that strawberries were not in season.I had to add several more tablespoons of powdered sugar to my berries for both the filling and the frosting.The strawberries in the store are just not as sweet this time of year.Please taste and make adjustments as needed.
Jodies Kitchen Strawberry Lemonade Cake
Cake
1 Box lemon cake mix
3/4 cup water
3/4 cup oil
4 eggs
1 box instant lemon pudding (small box 3.4 oz)
Mix all together beat well.Pour evenly into (2) 9 inch cake pans that have been sprayed with
Bakers Joy .Bake per directions on cake mix box or until done.
 
Glaze
3/4 cup powdered sugar sifted
1/2 of a 12oz can lemonade concentrate at room temp
Mix these together and sit aside
 Filling 
1 pound strawberries cleaned and capped
1 tablespoons powdered sugar
Puree these together
Frosting
1 pound strawberries
8 Tablespoons powdered sugar
1 quart heavy whipping cream
Puree strawberries & sugar together.Whip cream to stiff peaks then gently fold in strawberry puree.Refrigerate until ready to frost.
Assembly
Place one cake layer on cake plate and glaze top of cake with 1/2 of your glaze.Once this has soaked in add all of filling.Place second layer on top,and glaze with the rest of glaze.After this has soaked in you may frost top and sides of cake.Keep refrigerated.
