I will give Mom all the props on this delicious recipe and many thanks to her for sharing it with me.
Recently Mom has started trying to eat a lot more healthy,but being the foodie lover my Mom is,it must still taste great.
She told me about making a big batch of Pico De Gallo and she wanted me to try it. I got in the car drove over to her house,and she had it waiting.
After the fist taste I absolutely loved it.It was so fresh tasting.
Mom was kind enough to package me up some so I could take it to the lake with us, and everyone enjoyed it just as much as I did.
I hope you enjoy this version of Pico De Gallo,it is truly simple and fresh.
You may notice that this recipe calls for lemon instead of lime which is a little more typical in Pico De Gallo, we simply like the freshness of the lemon better.
You can eat it with chips,put it on your favorite taco,add to an omelet,the choices are endless.
Jodies Kitchen Pico De Gallo
8 to10 Roma tomatoes diced..This variety has less moister and is what I recommend
1 medium white onion diced
1 jalapeno diced.
1 bunch fresh cilantro,chopped
1& 1/2 to 2 lemons squeezed for juice
salt & black pepper to taste
Mix all ingredients together.Refrigerate and let sit at-least one hour before serving.
