Chicken Queso Pie

Jodies Kitchen Chicken Queso Pie




I love coming up with ideas for Chicken Breast.When I get it on sale its such a great bang for your buck.

There really is only 2 important notes for this recipe (Please see update at bottom of post).
First,it requires a spring form pan.The second thing is,you must use a packaged taco seasoning mix that you love,if you grab any old thing you have never tried,you may not like how this turns out.
You will get the flavor from your packaged seasoning which is why I say use one you like.
If you just don't use a package mix,by all means make your own seasoning blend with cumin garlic and onion.
Use your imagination.I topped mine with salsa,sour cream and sliced jalapeno.Complete recipe is listed at the bottom of page.


When layering you will start with one flour tortilla down in the pan then your chicken mixture then a sprinkle of cheese and continue layering until you end up with the last layer as the shredded cheese.Don't worry about getting all the chicken mixture to the edge of the tortillas,as the cheese melts it will fill it in all the way.




Make sure to let your pie rest a while when its done cooking.It makes for easier cutting. 
UPDATE! I have now tried this using a round casserole dish and it works fine.It will be a little harder to get a real pretty slice,but the flavor is exactly the same.



Jodies Kitchen Chicken Queso Pie
2 large Cooked & Shredded Chicken Breast..about 4 cups
1 package Taco Seasoning Mix..use your FAVORITE brand 
1 Jar Salsa Con Queso 15oz
4-9inch flour tortillas
16 oz Shredded Mexican 4 cheese Blend..NOT the one with the taco seasoning in it.
Place Shredded Chicken in a medium heated skillet or dutch oven and add the taco seasoning pack along with the amount of water your seasoning calls for.Cook this about 1 minute.Next you will add the jar of Salsa Con Queso and mix well,and take off heat.You will do 4 layers so this mix will need to be divided evenly when layering.Start layering with tortilla shell then chicken mix then shredded cheese.Complete all layers ending up with shredded cheese on top.Bake 15 to 20  at 350F  until cheese has melted and is golden brown.

  1. If you don't have a spring Form pan,you can still make this but you want get the pretty layers.

  2. What temperature is this baked at?

    1. It is baked at 350 F,but if you want to hurry it along at 400 or so would be fine.Everything is already cooked,just need to brown up the cheese.
