Pistachio Crusted Chicken

I love a good piece of old fashioned fried chicken as well as anyone else.Sometimes though I want to change it up with something a little different.
This is a easy recipe,I think the hardest part is I had to shell my pistachios and not eat them when shelling.Well honestly I did eat a few.I am a pistachio lover.My Family is not however,but they do love this Chicken.So here is the easy method.I was using three Chicken breast.just make more coating if you need to make more.

Jodies Kitchen Pistachio Crusted Chicken
3 Chicken breast
1 cup chopped pistachios ..this measurement is after they have been chopped in the food processor.
1/2 cup Panko Bread crumbs (you will mix the chopped pistachios and panko together)
2 egg whites beaten and thinned with a little water
salt and pepper to taste.

Simply have your skillet hot and ready to go with your choice of oil.I do a shallow fry for this.Dip chicken breast into egg wash then into your mixture of Chopped pistachios, panko, salt & pepper, coating both sides of your chicken well.Simply add to your pan and fry until done.Good Luck

Note:If you don't chop your pistachios fine enough they wont stick well,but be careful not to chop to fine you don't want powdered pistachios.
Don't throw out those unused egg yolks you may put them in the refrigerator and use at a different time.
