Jodies Kitchen Triple R Potato Salad
(Roasted Ranch Red Potato Salad)
1 bag ruby red fingerling potatoes 28oz
1 tablespoon oil ( I used canola)
3 tablespoons ranch dressing mix
3 tablespoons Mayo
1 cup sliced scallions green tops only (also known as spring onions)
salt and pepper to taste
Cut potatoes in half or thirds which ever needed to have all potatoes about the same size.Place in a bowl and add the oil,then sprinkle with ranch seasoning salt and pepper toss all together well.Add to a sheet pan and bake on about 425fF until potatoes are done.But don't over cook. It took mine about 25 minutes.When done baking take out of oven place in bowl add mayo and scallions toss until combined.Add more salt if needed.You can serve this at all temperatures.
Notes about this recipe:You may use any red potatoes you wish.I like having some crispy edges to some of my potatoes..If you don't simply toss potatoes about half way through the cooking process. If 3 tablespoons of mayo doesn't give you enough dressing for your liking feel free to add more.You may also sprinkle a little more Ranch seasoning when adding mayo if you like..I also make Roasted red potato salad without the mayo and use balsamic vinegar, oil and the scallions.Good Luck

  1. This picture didnt do this salad justice.I have enjoyed cooking your dishes so far,I wasnt sure how this one looked (sorry) but I have been happy with the other things so far,so I gave it a go.I wasnt dissapointed.It was very Good.

  2. No need to apologize..That for sure isn't the best Potato salad pic.Just couldn't make this one pretty for some reason.I guess I need to practice some food photography,but glad you didn't let the pic hinder you from making it,and glad you enjoyed.Thanks for commenting.
