Scallion Potatoes

Jodies Kitchen Scallion Potatoes



So your tired of the same old mashed potatoes.Well lets start here:
Are you using Cream or Half and Half  to make mashed Potatoes? Are you using Butter?

I am! I start this recipe with mashing together my potatoes and, adding warm Cream and Butter and of course salt.Now if your watching calories this might not be an option for you,so make your basic Mashed potatoes how you like,or need for your dietary issues.
Then you will add 1/2 cup chopped scallions (only the Green tops)
Now of course the amount is going to depend on the amount of Potatoes you have made.I used 2 very large fresh potatoes from my Garden when making this and the 1/2 cup was perfect.But just remember you do want to taste the scallion not just for looks in this recipe..You want to taste them..So make sure and chop plenty adding as much as you need incorporating them into the potatoes until just perfect for your taste.
