Oven Roasted Chicken

Jodies Kitchen Oven Roasted Chicken


 
 There is nothing better than a delicious chicken that has been perfectly roasted in the oven.My favorite part is the skin.

I have provided step by step pictures and the full recipe is posted at the bottom.



 You always want to Start your roasted Chicken by rinsing then pat it dry with a paper towel making sure to get all the moisture off. Pluck out any left over feathers you see while patting your bird dry.



Separate skin from the bird by running your fingers under the skin all over your Chicken.Make a mix of 1/3 cup Olive oil,1 1/2 teaspoon each of Garlic powder,onion powder,lemon pepper seasoning.
1/2 tsp. salt and pepper.


Take a spoon,and spoon the oil mixture under the skin. You want to make sure you go back as far as possible getting in every nook and cranny,make sure you don't forget the legs and thighs.
You should have loosened the skin in these areas as well



On the outside of the bird pour the remaining oil mix covering well,and stuff the inside of the bird with 1/2 a lemon,onion,and 1/2 head of garlic.Secure with kitchen cooking twine or rosemary sprig as I did, to keep those inside.You may not have to do this,if nothing is falling out.Bake in a 400f oven for 1 hour 15 minutes.Basting every 1/2 hr. with juices. (Don't Cover with foil)


Garnish to dress it up or just dig in.(Yes let it rest for about 15 minutes before cutting) Fresh Rosemary and lemon for plating.
Note: I know professional chefs have a pet peeve about garnishing with something you didn't actually use in the recipe,but I'm a home cook and do it the way I like.You could always use rosemary in your oil mix if you wish.Rosemary is delicious with chicken
.




This is just to show that you can make this delicious looking bird to take to a pot luck with some taters if you like.These were not cooked all the way just added for the pic to give you an idea.They actually look kind of sad beside that pretty bird.

RECIPE:
1 Whole Chicken
1/3 Cup Olive Oil
1 1/2 Teaspoons each of Garlic Powder,Onion Powder and Lemon Pepper Seasoning.
1/2 Teaspoon Salt and Pepper...Now I normally Go a Little Heavier with the salt.
1/2 Lemon..1/2 Onion...1/2 Head of Garlic for stuffing inside the Chicken
Rosemary and Lemon Slices for Garnish 
Rosemary for Kitchen Twin if Needed

Mix oil and seasonings together put under the skin of the Chicken and on top all over the bird,stuff lemon,onion and garlic inside cavity of your chicken.Bake in a preheated 400F oven for about 1 hr 15 minutes (this will depend on the size of your chicken)Take out and let rest before cutting.Garnish with Rosemary and Lemon..Or just eat!
