Jodies Kitchen Skillet Parmesan Baked Potatoes
6 small potatoes, scrubbed and cut in about 1 inch rounds as shown in pic. I used reds in this one.
¼ cup butter
Olive oil ( enough for a drizzle )
grated Parmesan cheese
Fresh Parsley for Garnish
Salt and Pepper to Taste
Preheat oven to 400 degrees.
Melt butter and pour into into your Cast Iron Skillet and spread evenly across the bottom. Generously sprinkle Parmesan cheese, salt and pepper into your skillet. Place potatoes down on the butter salt and pepper.I then drizzle with a little Olive oil and sprinkle more Parm on top of Potatoes.
Place in preheated oven and bake until Potatoes are done.I did cover mine in foil for about 15 minutes then uncovered and cooked until done.
Note: Though I made mine in a cast Iron Skillet any Oven Safe skillet or baking dish would do.I have seen this recipe before but they call for adding Garlic and Some with Rosemary ,the Possibilities are endless,use your Imagination.
