Candid Sweet Potatoes










Jodies Kitchen Jewels Candid Sweet Potatoes
Mother In Laws Recipe
4 medium sweet potatoes or 24oz. can sweet potatoes (drained)
1- 3 1/2 oz. pineapple drain and reserve 1/4 cup juice
2 tbs.butter
1/2 cup brown sugar
Topping
2 tbs. butter
2 tbs. flour
1/4 cup brown sugar
Mix together and set aside
Wash potatoes and roast in oven until done,you may boil,or microwave if you wish,until tender. Let potatoes cool then peel and cut if not using canned.Place in well greased baking dish. (option- you may add pineapple to top of potatoes but we don't do this) Original recipe does.
Melt 2 tbs.butter in saucepan, mix in 1/2 cup brown sugar and 1/4 cup pineapple juice,boil 2 minutes.Pour over potatoes. Bake on 350F for 45 minutes (baste every 15-this makes a difference) remove from oven and turn temp to 400 degrees..
Sprinkle topping over potatoes and bake 15 minutes or until topping is brown and bubbly. Good Luck
This is my favorite candid sweet potatoes recipe from my Mother in law.I asked for the recipe this past year and now I make them throughout the year,not just holidays.
