Jodies Kitchen Pecan Pie Muffins
1 cup Brown sugar
1 cup chopped pecans
1/2 cup plain flour
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup melted butter - don't substitute
2 large eggs
1 tsp. vanilla extract
Combine first 5 ingredients.Mix well.Then stir together butter,eggs,vanilla,add to the dry ingredients and stir together until just moist.Spoon batter into miniature muffin tins filling 3/4 full.Bake at 425 for 8 to 10 minutes.Makes about 24
