Caramel Cake

Jodies Kitchen Caramel Cake

1 pkg. plain white cake mix
1 cup whole milk
1 stick butter melted
3 large eggs
2 teaspoons vanilla extract
Place the cake mix,milk,melted butter,eggs,and vanilla in a large mixing bowl.Blend with electric mixer on low for 1 minute.Scrape down sides of bowl,increase mixer speed to medium and continue to mix until combined well.Pour into greased and floured 9x13 and bake in preheated oven 350 for about 30 minutes (until done when a knife is inserted in cake and comes out clean) Bake on the middle rack.
Caramel Frosting
1 stick butter
1/2 light brown sugar
1/2 cup dark brown sugar
1/4 cup whole milk
2 cups powdered sugar,sifted
1 teaspoon vanilla extract
Place butter and both sugars in a medium sized heavy sauce pan over medium heat.Stir and cook until the mixture has melted and come to a boil,add milk,stir and return to a boil.Take off heat and add powdered sugar and vanilla flavoring mixing fast with a spoon until smooth.Pour over cake immediately.
NOTE: The original recipe called for making the recipe in layers,but I do in a sheet pan because you have to work so quickly with this frosting.I also like to heat this up,makes the Icing soften back up,and is sooo good with vanilla Ice-cream.
