Chicken Enchilada

Jodies Chicken Enchilada




I Love a good traditional enchilada as well as the next person,so when my Mom had invited us for dinner one night she had the traditional one along with this other white one I had never seen before.
I had my doubts I would even like it because I love my Mexican food.
To my surprise I had a new favorite and went for seconds on this,asked for the recipe and have been making it every since.
Now I will tell you of course it doesn't taste like a traditional enchilada.
The cream gives it a delicious richness and the green chilies really set this recipe off.
One of my families favorites.I hope you enjoy. 


Jodies KitchenChicken Enchilada
1 tbs.Butter
1 med. onion chopped
1 - 4.5oz can green chillies drained and chopped
1-8oz Cream cheese room temp
3 1/2 cps. chopped,cooked chicken breast
8-8inch flour tortillas
2-8oz packages of Monterrey Jack cheese shredded
2 cups whipping cream
Melt butter in large skillet,add onion and saute 5 minutes
add green chillies and saute one more minute.Stir in cream cheese and chicken mixing until cream cheese has melted.Spoon 2 to 3 tbs. chicken mixture down the center of your tortillas,roll up and place seam side down in a lightly greased 13x9 baking dish.Sprinkle with Jack cheese and then drizzle with whipping cream.Bake at 350f until bubbling and golden brown.
