Tomato and Parmesan Orzo

Jodies Kitchen Tomato and Parmesan Orzo




 Jodies Kitchen Tomato & Parmesan Orzo
1 tbs butter
1 tbs olive oil
1 cup uncooked orzo pasta
1 can chicken broth-14.5 oz
2 tbs. grated Parmesan cheese (1 is for garnish)
2 Cloves garlic grated or minced
1 tomato chopped
Chives for Garnish
salt and pepper to taste
Melt butter in skillet with olive oil over medium-high heat. Stir in orzo and garlic, saute about 3 minutes careful not to burn your garlic.
Stir in chicken broth and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.After about 10 minutes of cooking I add the tomato.
Mix in 1 tbs of the Parmesan cheese Season with salt and pepper. Transfer to shallow bowl. Garnish with chives. Good Luck..One of my families favorites..I add so many different things to this depending on my mood,use your imagination
