Chicken Parmesan Spaghetti




My guy was requesting pasta one night about 5 years ago. So I did what I normally do and checked the cabinets and refrigerator to see what I had on hand. I didn't have any fresh veggies so I knew I would have only a few things to rely on. But I did have some basics and decided to put together something that would please us all that night.

Since that night it is a requested dish around here.

If you simply will not use store bought spaghetti sauce by all means use your homemade. I didn't have it at the time and just used what I had.
One fabulous thing about this recipe is it's done in one big pot...well you will need a bowl or plate to put the chicken in to shred, but besides that, one pot is going to do you.

This does seem like a lot of steps at first glance,but taking these steps and cooking the noodles in your broth makes a big difference in the flavor.

If you want to make chicken spaghetti in a simpler way than my recipe,try this: 
 Brown diced skinless chicken breast until cooked all the way, remove from pan then add to spaghetti sauce and mix well. Cook spaghetti noodles  as usual in salted water, drain,then mix with chicken sauce and add Parmesan. It does work that way and I have seen similar recipes using that method, but I do favor my method and think it taste more like chicken Parmesan than just chicken spaghetti.



Jodies Kitchen Chicken Parmesan Spaghetti

1 tablespoon oil
3 chicken breast..I like skin on
4 large garlic cloves
2quarts + 1/2 cup water
1-1/2 teaspoons onion powder
salt and pepper
1 jar spaghetti sauce
1 pound spaghetti
3 cups fresh grated Parmesan


(1)In a large stock pot add oil,on medium high heat brown chicken on both sides that has been salted & peppered (just browned not cooked).
(2)Add garlic,all of water & onion powder to pot. Simmer with lid on until chicken is tender and
 shred-able. 
(3)Remove cooked chicken and garlic from pot.
Mash garlic into a paste & remove skin(discard) from chicken & shred.
(4)Turn pot of broth up to high until boiling again and add in uncooked spaghetti stirring to break up noodles from sticking (you will not have the usual amount of liquid you normally have for cooking pasta) Place lid on pot and let simmer until noodles are almost cooked.
(5)Add chicken, mashed garlic, and spaghetti sauce into pot with spaghetti, mix well. Simmer on medium low until noodles are done. Make sure if you need more liquid to add a little more water and keep stirred so this does not burn or stick to bottom of pot.
(6)Once spaghetti is ready, turn off heat and remove pot from stove.
(7)Let cool about 7 minutes then add 2-1/2 cups shredded cheese and mix well.Add the remaining 1/2 cup cheese to top and serve.
