Low Country Boil

Low Country Boil By The Golden Girls
 
 
This beautiful and delicious Low Country Boil was made by The Golden Girls
 
 
Let's start by telling you who the golden girls are.
They happen to be my three Aunts who recently decided to move to the coast to live together. Two live in the same apartment together and the other just a few steps away in her apartment, but the three are always together.
Pretty much reminding me of the T.V. show where three older,very comical ladies live together.
 
 I don't dare call them old, they are still so full of life, young at heart and very adventurous! 
 
 Get dressed - don't get dressed 
 Go to the beach - don't go to the beach
 Go shopping - don't go shopping
Cook today - don't cook today
 
You get the point. Making no plans in advance just taking life as it comes. What a fantastic laid back life they are living together
 
Pricy is the youngest of the sisters and has lived by the coast before. I guess she is a true beach bum. She has always been the one known to pack it up and move when she wanted and where she wanted...Kind of like a free spirited, classy gypsy hippie chick. Dang she's a mouthful! Pricy is easy going and laid back. She is very independent and I have always admired her for that. Pricy is so intelligent as well, and I consider her as the brainy one in the bunch, not that the others aren't smart, but she is the go to out of the three when the computer stuff needs to be done or something needs assembling...lol
 
Brenda who most of us call (B.J.) is the middle in age between the sisters. This one surprised me when she said she was heading to the coast. She and I were very close and honestly seemed like my best friend more than my Aunt. She will crack you up in a heart beat with her dingy comments. I guess that's how she got the nick name dingy from their other sister Virginia who has now past on. B.J.went through a life change some years ago in which she also showed me how tuff of a lady she really is and I am very proud of her. I could always talk my B.J. into about anything and any hair brained idea I had she was always right by my side.
 
Janice is the older of the sisters, and out of the three is the one aunt I spent the least time with. This was simply due to her living in N.Y. and my family living in N.C. Remembering Aunt Janice as I grew up I considered her as the prissy one. Not in a bad way though, she wasn't stuck up and was always just as friendly as all the Chapman sister's. I remember she always wore beautiful jewelry, always had hair, nails and makeup fixed beautifully. She spoke and walked with such a graceful elegance. We were joking just the other day when I was visiting with them how she walked across the sand on the beach with her little elegant walk. I am so happy that over the last year I have been able to spend more time with her and she and I are becoming closer.

Recently I went with the family to the beach. We were so grateful that the evening we arrived The Golden Girls invited us over to their place for a delicious dinner they had made. They prepared the low country boil, along with melted garlic butter and corn bread. For dessert we had brownies and peach cobbler. Sounds like they are some fantastic cooks, that's because they all are. I am so lucky to have great cooks in the family who hand down recipes and share their kitchen knowledge.
 
I don't know where The Golden Girls will end up now that they have joined forces. I only know that where ever it is, these three will be having the time of their life enjoying each and every day just the way they want to. Their way!

Jodies Kitchen Low Country Boil
3 pounds small red potatoes
1 1/2 pound kielbasa sausage sliced in 2 inch pieces
4 ears corn broke in half
1/4 cup favorite seafood seasoning plus a little for sprinkling
3 pounds un cooked shrimp shells on
 
Place potatoes and kielbasa in large stock pot. Fill with 5 quarts cold water and stir in seasoning. Cover and bring to a boil cooking 5 minutes. Remove lid and add in corn. Cook 10 minutes. Stir in shrimp and cook for 2 minutes. Drain all and sprinkle with additional seasoning.
