Tomato and Basil Pie

This honestly is one of my families favorite tomato pie recipes.

It is filled with fresh tomatoes and fresh basil.

The original recipe was handed down from my mother n law.I posted the original some while back.In her original recipe it called for dried basil.
Since my family has lots of fresh basil doing so beautifully,I thought a nice re-do of this recipe with the fresh basil would be nice.
The original recipe also called for shredded sharp cheddar cheese.
It is fantastic but I wanted the remake version to have flavors a little more familiar with each other.
Tomato,Basil,and Mozzarella. 
Yummy what a great combo.

This taste so fresh and delicious.It does remind me somewhat of a nice margarita pizza.Well this recipe has onion so it's a little different,but still very familiar in taste.

You could definitely have this as a side to many wonderful main dishes or eat up as is for a meatless meal.I have enjoyed this many times just for a light lunch.

If fresh tomatoes are out of season,by all means use canned.

Step by step



Lets get ingredients together to place in your pie shell.
Chopped onion,sliced tomatoes,fresh torn basil,shredded mozzarella mix



Place a layer of tomatoes in your pie shell.I started with 2 romas and decided to do one more.You really only need one single layer I just used a few extra.Any variety of tomato will work



  Next were going to add the chopped onion and torn basil on top of the tomato layer,just try and distribute evenly.



Add your cheese mixture and spread evenly on top of the pie and your ready to bake.




Jodies Kitchen Tomato & Basil Pie
1 pie shell (UN-baked) I use 9 inch
Tomatoes sliced about 1/2 inch thick
2 Tbs. basil (torn)
1/4 tsp. black pepper

1/2 tsp.salt
1/2 cup Chopped onion
2 cups shredded mozzarella cheese

1/2 cup mayo
Bake pie crust 5 minutes at 425f and then remove from oven. Reduce heat to 400.Arrange tomato slices in pie shell to cover bottom with one layer. Combine basil, pepper, salt and onion.Sprinkle over tomatoes in pie shell.Mix mayonnaise and cheese together, spread over tomatoes to the edge.Bake 35 minutes until cheese is melted and top is golden Brown.
