One of my Families Favorites.
My Mom made some of these for everyone,and of course I had to have the recipe.
Warning these are Addictive,very rich as well.I do recommend using real butter and not substituting that because the rich buttery flavor really comes out in these.This is an older pic from a batch I had made a Christmas one year.
The crust is the only thing you may not be sure about when making these so I provided a pic for you.
Jodies Kitchen Pecan Pie Bars
Makes 2 pans but can be cut in half and works just fine.
Crust
6 cups all purpose flour
1 1/2 cup sugar
1 teaspoon salt
2 cups cold butter..cut into small pieces
Filling
8 eggs
3 cups sugar
3 cups corn syrup..light or dark
1/2 cup butter
3 teaspoons vanilla extract
5 cups chopped pecans
Crust's Preheat oven to 350°F. Mix all crust ingredients with an electric mixer until mixture
resembles coarse crumbs. Divide dough and Press firmly and evenly into your greased jelly roll or sheet pans 15x10Bake 20 minutes until golden brown.
FILLING: Beat eggs, corn syrup, sugar, butter and vanilla in a large bowl until well blended. Stir in pecans.
Pour over your hot Crust's spread evenly.Bake 25 minutes at 350°F until filling is firm around the edges and slightly firm in center. Cool completely on wire rack before serving.
