Baked Potato with Sour Cream and Chives

The perfect baked potato should start with a clean scrubbed potato.If you have freshly harvested new potatoes scrubbing hard is not necessary.The skins are very soft and just need a good rinsing.
You should start a good baked potato with coating the outside of the potato with salt.Do this while the potato is still wet from rinsing so the salt sticks well.Then wrap potato in foil and bake under tender inside. 

Most of us have had baked potatoes with chives, that's nothing new.But did you know if you grow your own chives you can eat the purple flower.Not only does is make your potato beautiful, it taste good as well. I don't eat the whole flower I usually pic it apart and sprinkle over the potato. I hope this gives you a little inspiration to grow some herbs and dress up that tater. These chives and bloom came from my own herb garden.
