Country Girl Skillet Cordon Bleu





 This is such a bad picture of such a delicious dish,and I do apologize and will get a better one at some point.


Jodies Kitchen Country Girl Skillet Cordon Bleu
3 Chicken thighs
3 slices real Swiss cheese
3 slices smoked Black forest Ham
3 tbs. butter
2 tbs flour (all purpose)
1 can chicken broth (about 1 1/3 cup if using your own)
1/4 cup evaporated milk (canned milk,not the sweet kind)
3 dashes white wine vinegar
salt and pepper to taste
In a skillet melt butter and fry your chicken on both sides that have been salt and peppered.Cook until done.Take out of pan and set aside(when chicken has cooled remove the skin if using skin on chicken)
In your same skillet add flour and whisk, let cook about 3 minutes on medium heat,then turn up temp to medium high add chicken broth slowly while whisking,change over to a large spoon scraping the bottom of the pan getting all the bits of fried chicken up.After it has cooked a few minutes and has become thicker,stir in milk and then your white wine vinegar,stir and add more salt and pepper if needed.Add chicken pieces back to pan and top with a slice of ham then a slice of the cheese.But under broiler just until cheese has melted some.You are ready to eat.
Note.This recipe can be done with 4 pieces of chicken.I used skin on thighs,but you may use breast and may even use Skinless breast to cut out some of the fat. I you don't have white wine vinegar it can be made without,but will taste more like regular chicken gravy,using the white wine vinegar is really my special touch and makes the great sauce for this recipe.
