Lace Cookies

Jodies Kitchen Lace Cookies


These delicious buttery bites surely get there name from the appearance the cookie has.They are so thin and almost britle like that they simply melt in your mouth while eating.

I suppose these have been around a very long time,and have been a family favorite to many for all those years.I just recently learned there are many variations to this cookie,and now I cant wait to try some of those.These cookies are very easy to make.The hardest part is, it makes so many I used 3 pans at once and continuously had them rotating,you know,cooling one while cooking another and scooping one..LOL. Its worth it. Good Luck

Jodies Kitchen Lace Cookies
2 1/4 cups  regular oatmeal (uncooked)
3 Tabelspoons all purpose flour
1 cup butter,melted
1 teaspoon salt
1 box (16 oz) light brown sugar..may use dark
1 teaspoon vanilla extract
1 egg slightly beaten
Preheat oven to 375F. Mix oatmeal,sugar,flour and salt.Stir in melted butter.Add egg and vanilla,mix well.Cover cookie sheet with foil.Drop batter by 1/2 teaspoons,well apart.Bake until light brown (about 6 or 7 minutes). Place foil with cookies onto rack to cool.Cool COMPLETELY before removing cookies.
