Jodies Kitchen Chicken Quesadillas with Chipotle Cream Sauce |
This is a all time favorite in my family.
So fast and easy when you have left over chicken,the sauce can be made ahead,and only takes moment to cook.
The quesadilla is crisp on the outside and filled with warm delicious flavors on the inside.
My Chipotle Cream Sauce is a great bonus and you will find many other uses for it besides quesadillas.
Jodies Kitchen Chicken Quesadillas with Chipotle Cream Sauce
Chipotle Cream Sauce
1/2 cup sour cream
2 tbs. Chipotle in adobo diced (can take out seeds)
2 tbs. Lime juice
1/8 tsp. salt
1/8 tsp. pepper
Mix together well,chill at-least 30 min.before using
Quesadillas
Shredded chicken
roasted red peppers
Cilantro
Mexican melting cheese of your choice-I used a mix.
Tortilla shells
Place all ingredients between your shells and cook on both sides until golden brown.I did mine in a lightly oiled skillet.
