Slow Cooker Chicken With Vegetable Rice

This is such a old recipe with many variations, but I figured it was time to write a post for it because hey, the oldies are goodies after all.
Very easy to do, and pretty inexpensive.
You do need to sear the chicken first on both sides just to get that good color and a nice texture to the skin so that it will hold up during the cooking process.
Its also going to help flavor your rice and veggies.
Two important things you should know to make this dish the best it can be: 
Use chicken that has the skin on it.You will not get the same flavor if you use skinless chicken.
Use fresh not frozen vegetables.If you use frozen veggies they more than likely will turn to mush,
DO NOT! Use instant rice.You may use brown or white just not instant.I used brown in the recipe posted.




Jodies Kitchen Slow Cooker Chicken And Vegetable Rice
Serves 2 but can double if needed
3 Tbs butter (divided)
1 cup chicken stock
1/2 cup uncooked rice
1 cup uncooked veggies chopped if needed (I used carrots and brocolli)
1 teaspoon oil (any high heat oil)
2 chicken thighs
Seasoning:Onion powder, garlic powder, salt and black pepper to taste. 


In your crock pot add 2 of the 3 tablespoons of butter and the chicken stock.Turn slow cooker on high and let cook with lid on until butter has melted and steam comes from the cooker when lid is removed.
Once stock has heated and butter is melted add rice and vegetables.You will want to add a little salt and pepper at this point and give a little stir.Place lid on slow cooker and begin with the next step.
Season chicken pieces well on each side.
In a skillet on top of stove add the last tablespoon of butter butter and the teaspoon of oil to hot pan.Place chicken skin side down and sear until it is really golden brown( about 1 and 1/2 minute if pan is hot enough), then turn chicken and do the other side.
Remove chicken pieces onto a plate and scrape the bottom of pan to remove any bits and pieces left behind, pour the juices from the pan into the slow cooker on top of the vegetable rice.Place chicken on top and cover
Cook about 1 hour then check chicken for the correct temp and make sure rice is coked to your liking.
It took my dish about 1 hour 20 minutes for the rice and chicken to be done.Exact time cannot be given because chicken pieces vary in size and variety of rice and texture differs.
